Our cattle are raised to maturity on lush free-range pastures of the San Saba River area to produce very tender and well marbled grass-fed beef and a much more natural, nutritious, and sustainable product than conventional producers.

Why Grass-Fed & Grass-Finished Beef?
Grass-fed & finished beef is Better for You as it’s much healthier. Grass-feed beef contains high levels of the good Omega 3 fats (similar to wild caught salmon). Omega-3 fatty acids have been found to prevent and treat many diseases including, heart disease, stroke, autoimmune responses such as lupus, eczema, and rheumatoid arthritis, and a number of other conditions. Additionally, studies sited on WebMD show grass-fed beef contains more antioxidants than grain-fed beef. Antioxidants help prevent cell damage that can lead to serious diseases such as cancer and Alzheimer’s disease. In contrast, conventional grain-finished cattle don’t have these benefits and are often exposed to unhealthy growth hormones and antibiotics.
Grass-fed & finished beef is Better for the World as it’s more humane and environmentally sustainable. Our cattle live long vibrant lives, roam and graze lush pastures, and are protected from man-made toxins. Conventional grain-fed cattle live short unnatural lives where they spend their final 3-9 months crammed in enormous feed lots and fed unhealthy GMO grains, growth hormones, and antibiotics to minimize cost and accelerate weight gain. Grain Production for conventional feed lot cattle is detrimental to the land and natural ecosystem and requires high amounts of fossil fuels and chemicals.

Purchase Process & Pricing
We will coordinate your order requirements with the processor to simplify the experience. Pricing is per pound of “hanging” weight, which is the carcass weight after it has been taken to the butcher shop. Packaged weight as a % of hanging weight for our cattle average ~70% (high for grass-fed) and additionally you can receive organ meats, fat/suet, and bones at no cost.
- Half steer: typically 300-400 lbs. of “hanging” weight is $8.25/lb. (contact us for current pricing).
- Half orders allow you to customize how your order is cut, processed, and packaged.
- Quarter steer: typically 150-200 lbs. of “hanging” weight is $8.75/lb. (subject to change).
- Eighth steer: typically 75-100 lbs. of “hanging” weight is $9.50/lb. (subject to change).

- A $100 deposit on quarter & eight animals and a $200 deposit on half animals will reserve your order. Deposits will be credited against your purchase.

- What cuts will I receive? You will receive a mix of most cuts: ~25% steaks, ~35% roast and misc. cuts (such as brisket and ribs), and ~40% ground beef and pan sausage. Additionally, upon request you will also receive the nutritious organs and soup bones. We can send you an approximate breakdown by cut.
- Can I request specialty cuts? The processor can produce most cuts you’ll find in grocery stores. Customization is primarily limited to half animal orders due to processing constraints.
- How much freezer space do I need? One cu. ft. can hold ~30 lbs. of meat and you will need ~20% more for bones. Our cattle run heavy, so suggest 4-8 cu. ft. for a ¼ cow and 8-16 cu. ft. for a ½ cow.
- How will I receive my order? It will be delivered free of charge (typically on Saturday) if you are in Austin or nearby. Otherwise, we can make alternative arrangements.
- What is a beef share? It is purchasing a portion of an animal, which simplifies the process and enables us to keep your price very low versus comparable retail. We will coordinate all processing and delivery arrangements on your behalf and all costs are included in your quoted price.

CustomerWhere’s the beef?? Well, it’s clearly at River Hawk Ranch. I’ve been buying their product for two years now, excellent marbling, fantastic quality on all cuts (I’ve had NY Strip, Filet Mignon, Ribeye, Shoulder and Chuck roast, strip steak and their skirt steak (best I’ve ever had)). I’ve been buying direct from ranches for over six years now, as well as from major retailers (Sprouts, Whole Foods, local farmers markets). No match to River Hawk which is why I only buy from them now. Quality for value, delivery, customization/cuts, and a personal touch unlike any I’ve dealt with before. Get some more, before I do!

CustomerGrass-fed beef from River Hawk Ranch is really good. I have tried skirt steak, chuck roast and ground beef so far. Flavor and texture are way better than grass-fed beef I bought from Whole Foods while the price is substantially lower. I like the meat packaging as well. Steaks and roasts are in vacuum sealed bags. Ground beef is packaged in 1LB bags, which is very convenient.
